Simply Quiche

Ingredients:

Pastry:

1 cup of plain flower
1/2 cup of Butter
Pinch of Salt

Quiche filling:

3 Eggs
1 cup of milk
a handful of asparagus
salt and pepper

 Shortcrust pastry is so easy. You simply put the butter and flour into a bowl and turn into breadcrumbs with your hands. Squish it into a ball and then mould it to your dish. Blind bake it for 20 minutes and then take out your baking beads and bake for a further 10-15 minutes, or until it goes a little brown on top. Then cool. 

 Chop some asparagus in half

 Put it in a pan with some butter and cook for 2-3 minutes. 

 Let your child play with the egg shells and empty boxes. Happy baby= happy mummy.

 Sprinkle some cheese over your pastry case and arrange the asparagus however you like!

 Mix the eggs and milk together and add some salt and pepper. Whisk it until it froths a little and pout over your asparagus. Sprinkle some cheese on top.


Cook for about 35 minutes and then Enjoy!

*Some people add half a cup of cream to the quiche mix, but it is perfectly find without this. And probably healthier too, so bonus! You can also add pretty much any veg or meat you like to a quiche. Be inventive! I made spinach and tomato quiche over the weekend and it was yummy!
