Rainy Day Food

These are my favourite pancakes to make! You can slice it in the pan and serve with some fresh strawberries or even ice-cream for a treat. They are so so simple to make and are a great way to use up any fruit in the fridge.

The mixture is 1/4 cup of plain flour, 1/4 cup of milk, 1 egg, 1 egg white whisked, a splash of honey, a pinch of salt and a squirt of vanilla extract if you want! You just mix it all together in a bowl and pour it into a pan. Cook on the hob until the edges are just starting to go golden and hard and then sprinkle over chosen fruit and transfer to the oven for about 7 minutes.

And Voila! So so simple but really delicious. This is my go to recipe at the moment.

It's hard to find things to do all the time when it's raining outside. This week is being particularly mean to us weather wise. I've done the painting, the arts and crafts, the cooking together... but sometimes you just want to get outside! There is a fantastic new bingo game on 888ladies. It's called Millionaire Genie and it certainly knows what women like! So if you're bored indoors with a grumpy toddler, why not have a flutter on some online bingo. You never know, it could be your lucky day!
