I made this recipe up, so bare with me here. We really liked it, but of course, i'm no professional cook! So it comes with a 're-create at your own risk' kind of warning!
First, put some peeled, chopped apples into a saucepan with a handful of brown sugar and a cinnamon stick. Cook until it turns all gloopy and smells sweet.
Line a dish with some ready made puff pastry.
Slap on the apple mush you just created (remember, I made this up... it's kind of like stewed apples. Basically.)
Next, peer, core and slice up some cooking apples. I used 3 big ones!
Arrange the apples in the dish in the most artistic way you can. Sprinkle on some more brown sugar and cook in the oven until the pastry is golden (about 20 minutes). Serve with ice cream or cream.
If you do make this let me know what you think! The apples were quite sharp, but I kind of like that in a pudding and it worked with the pastry and ice cream!
