I'm not kidding, this recipe is the easiest thing to make for your family. It's amazing for those days where you just can't be bothered to stand over an oven for 2 or 3 hours, and even better for those Sundays when you get back from a long walk in the park and want something warm and filling to eat!
The ingredients are very simple, the sort of thing you may already have in your fridge and cupboards. So you need:
Cook the chicken in a little oil so that it browns on both sides. Then take them out and put a few sprigs of rosemary and a couple of chopped cloves of garlic in the pan. Stir for a couple of minutes.
Add some chopped tomatoes to the pan and bring to the boil. Simmer for a couple of minutes and pour into a roasting tray. Add chicken and a few extra sprigs of rosemary. Pop in a preheated oven at 180 degrees or gas mark 6 for about 45 minutes. Serve with mash potato, pasta or rice.
I picked all the chicken off the bone for Thomas and served it with mash potato.
