Such a simple but amazing cake to make. And it looks really impressive too! I have started making a lot more food form scratch recently, it's quite simply much cheaper than buying it ready made. I bought a huge bag of self raising flour and plain flour from Asda for 30p each, which has lasted me ages so far. Its so nice to have simple baking ingredients in the cupboard for those times when you just don't have any treats left in the house! I mean, take some plain flour and mix in some milk and an egg and you have pancakes. How easy is that?!
Mix 50g butter with 50g brown sugar together and smooth over the bottom on the tin. Place pineapple slices over the top.
And cherries too, if you like them?!
Then pour over a simple cake mixture. 100g plain flour, 100g butter, 100g caster sugar, 2 eggs and a teaspoon of baking powder. You could add some vanilla extract too if you like!
Bake at 180C/ 160C fan or if you're like is, gas mark 4! It will probably need around 45 minutes, but to check you can just stick a cocktail stick in the middle and see if it comes out clean. Then leave to cool for a bit and turn upside down onto a plate.
It is delicious served with ice-cream. Or in Alice's case, just shovelled into her mouth until it's all gone!
