Courgette lasagna

This is one of our favourite go-to meals! It's vegetarian, really filling and super simple to make. We've been trying to eat healthier recently, and I've finally realised that it doesn't have to be boring. Yes, you can make healthy delicious meals! Haha!

So for this you'll need 3 courgettes, tinned tomatoes, some lasagna pasta sheets and ricotta!
Grate the courgettes and put in a saucepan with a little oil. I added some spinach too! Cook until the courgette goes a dark green (2-3 minutes)
Add 3/4 of the ricotta and stir. Now it's time to layer up. I find it's best to heat the tinned tomatoes in the microwave first. 
Put a layer of the courgette in. Top with some pasta sheets. Then layer on the tomatoes and some more courgette filling and more pasta sheets. Continue until your mixture runs out!
For the final layer, spread some ricotta cheese on top and then some grated cheddar.
Cook in an oven at 180 degrees for about 35/40 minutes or until the pasta sheets have gone soft. 

Thats it! We normally don't serve it with anything else as it is so filling on it's own! Enjoy! xx
