Have I mentioned we've been cooking more?! Haha! I think a little too much, huh? But we have been trying really hard to cook all our meals from scratch, using fresh ingredients and creating healthy delicious meals. Recently I came across a little soup on the internet and decided to give it a go. It's become one of my favourite go-to recipes for lunch and dinner! And if you're like me, you like to experiment with recipes and don't exactly measure your ingredients properly. So I've added the recipe but with no measurements. Because... you know, add as much or as little as you want!
Here it is:
Chop a red onion up very small and cook in a pan with some coconut oil.
Grate up some sweet potato and add that in too.
Add a tablespoon of green thai curry paste.
Add about 500mls chicken or veg stock
Simmer until everything is tender.
Add in about half a can of coconut milk
Blend to preferred consistency
Add some chopped coriander and serve with a ryvita biscuit!
